– Ingredients –

  • 4 eggs
  • 1 banana ripe
  • 2 spoons (soup) of roasted peanuts (without salt and without skin)
  • 1/3 cup raisins, dark
  • 1/3 cup of coconut oil (in liquid state)
  • 1 cup coconut grated fine without sugar
  • 1 spoon (soup) of yeast chemical

– Mode of preparation –

  1. Pre-heat the oven to 180 °C. Grease a baking dish (20cm in diameter with central hole) with coconut oil.
  2. In a blender, place the eggs and beat for 2 minutes. Add the banana and blend until it’s the texture of cream.
  3. Add the coconut oil and the raisins and beat until that this integrates to the mass. With the blender still on, place the grated coconut and the peanuts, and beat for 1 more minute.
  4. Finally, place the yeast chemical and mix only to incorporate.
  5. Pour the contents of the blender in the form and bake in the oven for more or less 25 minutes.
  6. The cake will be golden on top. Put a toothpick in the center of the cake, if comes out clean it is ready.

4. CAKE COCOA

Instead of flour, use quinoa instead of milk with lactose, use-if you drink almond. And to not use the sugar in traditional, option is the sugar or coconut stevia pure.

– Ingredients –

  • 2 cups of quinoa cooked
  • 1/3 cup of milk of almonds
  • 4 organic eggs
  • 1/2 cup of butter ghee (or coconut oil or olive oil)
  • 1 spoon (tea) vanilla extract
  • 3/4 cup sugar coconut (or 1 teaspoon of stevia pure)
  • ½ Cup of cocoa powder
  • 1 spoon (tea) baking powder
  • ½ Spoon (tea) of baking soda
  • 1/2 spoon (tea) of salt

– Mode of preparation –

  1. Pre-heat the oven to 180 °C.
  2. After, grease the form of the cake with a sheet of paper of the butter.
  3. Melt the butter ghee (use vegetable oil liquid, do not need to melt), add the quinoa, milk of almonds, the eggs and the vanilla in a food processor or blender.
  4. Mix well until the dough is homogeneous.
  5. Add the sugar, coconut, cocoa powder, baking powder, baking soda and salt, and take it all to another container to mix well.
  6. Pour the batter into a greased and lined and bake in the oven about 40 minutes or take the test of the toothpick.
